Rabbit Recipes...


 

Rabbits are at their best between 3 and 4 months old.  At this age they are plump and have plenty of white fat around the kidneys.  The eyes should be bright, the feet flexible and the claws smooth.  The ears of a young rabbit will tear easily and the lower jaw will yield to pressure between the finger and thumb. 

Rabbits are paunched immediately they are killed, and hung, head down, for 4 to 5 days.  Young rabbits are suitable for roasting, but older animals should be used for civet or stew.
