The aim of this course is to equip the candidate with the knowledge, understanding, skills and awareness required to undertake basic carcase inspection as required for the Deer Stalking Certificate Level 2 (DSC 2) Assessment and also to equip the student with the basic skills in home butchery of a deer carcase. It is an ideal course aimed at the beginner or novice shot to improve skills.
This is a one day course which will provide the novice or less experienced stalker with a sturdy foundation of knowledge. Safety and basic hygiene legislation will be dealt with in a classroom situation moving on to the larder carcase preparation area for the practical aspects which will deal with skinning, inspection and basic butchery techniques. The course will offer the candidate the chance to butcher a carcase under the direct guidance and supervision of the course tutor(s).
There will also be some time for discussion and explanations of the course and associated subjects.
