Sorted Venison

You will need: Loin or haunch of  vension, butter, juice of half a lemon, seasoning, marinade, 6 juniper berries and lemon butterflies or slices

1) Cut the venison into 3/4 inch slices, allowing 1 slice per person (or bunny!) Season and marinate for 36 hours.
 
2) Heat a large frying pan, and put in enough butter to cover the bottom.
   
3) Dry the venison slices and put into the fat.
 
4) Fry over a moderate heat until brown on one side, turn over and brown on the other.
   
5) Turn the heat down very low, cover the pan and cook until the meat is tender for approximately 20 minutes.  Lay the slices, overlapping, down a serving dish and keep warm.
 
6) Strain the marinade into the pan and boil briskly. Adjust the  seasoning and add the juniper berries,crushed, and the lemon juice.
   
7) Spoon the sauce over the meat and garnish with lemon butterflies.
