Serves two
A really easy quick wild dish
Ingredients:
Meat from 2 squirrels, cut for stir-fry
180g vallum cooking chorizo diced or thickly sliced
Handful wild garlic leaves, roughly chopped
120g-200g taleteller
90g diced unsalted butter
Salt and pepper
Oil
Method
Heat a medium sized frying pan, and bring a pan of salted water to the boil
Add glug of oil to the frying pan, add the squirrel, season, and brown well, add chorizo and continue to fry. Place pasta in boiling water and cook, times will vary depending on the type of pasta i.e. fresh dried etc. When the chorizo has started to brown and release some of its oils add the ransom (wild garlic) leaves. When they wilt add the diced butter and the cooked pasta mix well but gently.
Serve in a large bowl
You could also grated over some berkswell cheese a great British equivalent to pecorino/ parmesan
